Fancy a tasty Asian meal? This nasi goreng is packed with vegetables and delicious spices. It’s easy to make, has a lovely savoury flavour and is perfectly complemented by a fried egg and crispy prawn crackers. A real everyday favourite!
1.Cook the rice according to the instructions on the packet and leave it to cool completely. If necessary, place the rice in the fridge. Using cold rice prevents the nasi from sticking together whilst frying.
2. Finely chop the onion and garlic. Heat a little oil in a wok and gently fry the onion and garlic for a short while. Add the spices, sambal to taste and a dash of soy sauce. Fry for about 1 minute.
3. Dice the pepper and fry it for a few minutes, until it softens slightly. Slice the mushrooms, add them and fry until they have shrunk slightly.
4. Slice the leek into rings and fry briefly. Then add the cooled rice a little at a time and mix everything together well. Taste and season further with soy sauce and/or sambal if necessary.
5. Heat a little oil in a frying pan and fry the eggs as fried eggs or an omelette. Serve the nasi goreng with the fried egg and prawn crackers.
Tip: it’s also really tasty with satay sauce!
