Ingredients
For the protein chunks:
150g Yakso protein chunks
1 tbsp lemon juice 125g Greek yoghurt
1 tsp paprika powder
1 tsp curry powder
1/2 tsp turmeric
1/2 tsp ground cumin
1 tl tsp Salt
For the sauce:
1 tbsp olive oil
1 onion, finely chopped
3 cloves of garlic, finely chopped
400g tinned chopped tomatoes
250ml coconut milk
1 tsp curry powder
1 tsp paprika powder
salt and pepper to taste
Serving suggestion:
rice, naan bread or potatoes
A flavourful and comforting dish that brings the authentic flavours of India to your plate.
Method:
1.
Prepare the protein chunks according to the instructions on the packet. Drain and squeeze out any excess liquid thoroughly..
2. Mix the protein chunks with the yoghurt, lemon juice and the spices for the marinade. Leave to marinate for at least 30 minutes.
3. Bake the marinated protein chunks for 15–20 minutes in a preheated oven at 200 °C or fry them in a frying pan until golden brown.
4.Meanwhile, fry the onion and garlic in a pan. Add the tomatoes, coconut milk and the relevant herbs and spices, and simmer gently for 10 minutes.
5. Add the fried protein chunks to the sauce and cook for a further 5 minutes, so that all the flavours can infuse properly.
6. Serve with rice, naan or potatoes.
